Miami Single Momma is now North Carolina Momma

Yes I did it! I moved to NC! been here since early Oct and I must say I could not be happier, the first week was a little crazy and the temperature change takes some adjusting too but it is just wonderful! It is beautiful to see the Fall Season in all its glory to see the holidays being celebrated and to feel them in the air.

My second week here I got our place and met some amazing neighbors that have quickly become like family . And we have been having a blast, Halloween was great we took the boys to the Park where they had an event with all the stores Downtown and they where all out giving candy . The boys met Spiderman and came home with enough candy to last a while! Then we had the Veterans Day Parade which was a very emotional and beautiful event for everyone.

Today is Thanksgiving and my list of things to be thankful for is still growing because we have been blessed by this move, we have a great place to live, the best friends anyone can ever ask for as neighbors and I even got a new kitten that ran into my house and stayed ever since!

I am glad I too the leap and came here because it has been the best decision for the boys and I!

Beautiful Poem for all Parents of Special Needs Children

My son Martin will turn 4 in Nov, he is the most amazing little boy you will ever meet, happy, smart and all together wonderful makes everyone that meets him fall under his spell.

He taught me how amazing life is and how incredible it is to be alive, you see Martin is my second child and he had a stroke at birth and was later diagnosed with a mild form of Cerebral Palsy.

When I received the diagnosis I have to say I broke down crying, why Martin? why my little baby boy?
I am happy to say that Martin has been thriving he is receiving all the therapy he needs and is now walking, talking and doing just great!

Like I said he has taught me how wonderful life is, because when you see a child that is so happy despite of any delays or disabilities and just takes everything so well and has such a great attitude it really makes you grateful for all the little things in life.

Raising a child with special needs is not easy but I must say it is also such an incredible experience to have such an amazing child in your life, Martin has showed us that life is a precious gift!

I came across this poem and wanted to share it with you ! Its a beautiful way of describing the wonderful experience of raising a Child with special needs. ENJOY!

WELCOME TO HOLLAND

When you're going to have a baby, it's like planning a fabulous vacation trip - to Italy. You buy a bunch of guide books and make your wonderful plans. The Coliseum. The Michelangelo David. The gondolas in Venice. You may learn some handy phrases in Italian. It's all very exciting.
After months of eager anticipation, the day finally arrives. You pack your bags and off you go. Several hours later, the plane lands. The stewardess comes in and says, "Welcome to Holland."
"Holland?!?" you say. "What do you mean Holland?? I signed up for Italy! I'm supposed to be in Italy. All my life I've dreamed of going to Italy."
But there's been a change in the flight plan. They've landed in Holland and there you must stay.
The important thing is that they haven't taken you to a horrible, disgusting, filthy place, full of pestilence, famine and disease. It's just a different place.
So you must go out and buy new guide books. And you must learn a whole new language. And you will meet a whole new group of people you would never have met.
It's just a different place. It's slower-paced than Italy, less flashy than Italy. But after you've been there for a while and you catch your breath, you look around.... and you begin to notice that Holland has windmills....and Holland has tulips. Holland even has Rembrandts.
But everyone you know is busy coming and going from Italy... and they're all bragging about what a wonderful time they had there. And for the rest of your life, you will say "Yes, that's where I was supposed to go. That's what I had planned."
And the pain of that will never, ever, ever, ever go away... because the loss of that dream is a very very significant loss.
But... if you spend your life mourning the fact that you didn't get to Italy, you may never be free to enjoy the very special, the very lovely things ... about Holland.

Macaroni and Three Cheese Lunch Muffins

When I saw this recipe I had to make it and they came out delicious yummm yumm perfect for the fall/winter weather months. So I had to Share! ENJOY!
My Boys Rated it YUMMY!

Ingredients: 

• 8 ounces (2 cups) elbow macaroni
• 1 tablespoon unsalted butter
• 1 tablespoon all-purpose flour
• 2/3 cup low-fat (1%) milk
• 1 1/2 cup shredded Cheddar cheese
• 3 ounces fresh goat cheese
• 1 1/4 teaspoon Dijon mustard
• 1/2 teaspoon fine sea salt
• 1 cup acorn or butternut squash puree
• 1 large egg, beaten
• 2 tablespoons finely grated Parmesan cheese
Preparation: 
Preheat oven to 375°F. Cook macaroni according to package directions until just tender. Drain very well.
Meanwhile, melt butter in medium saucepan over medium heat. Stir in flour; cook, stirring constantly, for 1 minute. Slowly stir in milk. Bring to a simmer and cook, stirring constantly, until mixture thickens. Stir in Cheddar cheese, goat cheese, mustard and salt; lower heat to medium low and stir until cheese is melted. Remove from the heat and stir in squash puree. Stir in egg. Pour cheese mixture over macaroni and stir until coated.
Line a 12-cup muffin pan with paper liners and spoon macaroni mixture into liners. Sprinkle tops with Parmesan and bake until lightly browned and crispy on top, about 25 minutes. Cool muffins in the pans for 10 minutes. Eat warm or room temperature, or remove from the pan, cool on a rack, and refrigerate for up to 3 days.

Im BACK!

Well after a long hiatus I am back and I appreciate those of you who are still following the blog! A lot has happened since my last Blog Martin is now walking and running and talking. RayRay is starting Kindergarten and im on my way to being a nurse in North Carolina yes you heard me, we are moving next month. Not only did I get a fantastic job offer and a chance to get a higher education but life is so much better up there. I will get to spend time with my babies without stressing so much about the high Miami bills! We will get to experience the seasons and the classes in school are smaller so the boys can get a better education. I'm so excited the houses are huge and so beautiful! Well if you have any advice for us let me know! I will be posting regularly!
